Cicada Nymphs (Pomponia Linearis) are considered a delicacy in Southeast Asia. Cicadas have large eyes wide apart on the head and transparent, well-veined wings. Many people worldwide eat cicadas; females are particularly prized because they are meatier.
Dried cicadas contain over 50% protein and are low in fat. We process our cicadas by washing and microwave drying; we do not add seasoning.
The majority of our insects are microwave-dried. We have found that the short processing time of microwave drying (only 9 minutes) produces a higher-quality edible insect and results in less nutrient loss than other drying methods, such as boiling and oven drying.
You can eat cicadas whole or ground into a powder and added to any food to increase the protein content. Cicadas feed on liquids rather than solid material. The larvae and nymphs suck juices from plant roots, while adults suck fluids from woody shrubs and trees. Their simple, clean diet gives them their delicate, nutty flavour.
