Canned dehydrated Mole Crickets with seasoning.
Mole crickets (Gryllotalpidae) are thick-bodied insects about 3-5 cm (1-2 inches) long, with large beady eyes and shovel-like forelimbs highly developed for burrowing and swimming. Mole crickets are omnivores, feeding on larvae, worms, roots, and grasses. They are relatively common, but because they are nocturnal and spend nearly all their lives underground in extensive tunnel systems, they are rarely seen.
We purchase our mole crickets from professional insect collectors in Northeast Thailand; soon after they are caught they are cleaned, boiled and then dehydrated to lock in nutrients. Following the dehydration process we season them with salt or other seasoning and pack them in cans with moisture and oxygen absorbers. This keeps them fresh for up to two years.
A single can contains 15 grams of dried mole crickets. Individual mole crickets weigh approximately 0.5 grams each after dehydration therefore one can will contain approximately 30 mole crickets.
